Andhra Mutton Fry

Ingredients 

Ground mix
3 red chili’s
4 Kashmiri chilies
2 tbsp dried coconut
1 tbsp khuskhus
3 tbsp coriander seeds
1/2 cinnamon stick
6 cloves
5 cardamoms
1 tbsp fennel seeds
1.5 tsp cumin seeds

Marinade
1 lb lamb
1 tsp ginger grated
2 tsp garlic grated
1/2 tsp turmeric
1/2 cup chopped onion
1 tsp salt
2 tbsp ground spice mix
2 tbsp yogurt

For dish
1 tsp ghee
1 strand curry leaves
2 green chilies
Remaining ground spice mix
1 tbsp pepper

Method

Dry grind all the spices listed under ground mix 

Mix all ingredients under marinade 
Marinate mutton for 3-4hrs

Cook mutton in cooker for 10 mins

In pan heat ghee
Sauté green chilies & curry leaves
Once they splutter add ground spice mix & pepper powder and sauté for a min
Add mutton, mix well and cook covered for 2 mins

Open and let simmer till dry
