Doro Wat (Ethiopian Chicken Stew)
Ingredients
3 lbs bone in chicken
2 tbsp oil
2 tbsp ghee
2 medium finely chopped onions
5 finely chopped garlic cloves
4 tsp berbere spice

1 tsp sugar
2 cups chicken stock (or water)

Method
Add the oil and ghee in a pan over medium heat.
Fry the onion until very soft and slightly brown.
Add the garlic and tomatoes, sauté till mushy.
Add berbere spice and sugar.
Mix well and cook until thick.
Add the stock (or water), the meat cubes, salt, and cook closed on sim for 20 mins
Once the chicken is cooked, cook open for another 5 mins or till gravy is at the required consistency
