Baked Parsley Salmon with Brussel Sprouts
Ingredients
1.5 lb salmon filet
1/2 lb brussel sprouts
Marinade
1.5 tsp salt
1.5 tsp pepper
1 tbsp finely chopped garlic
1 tbsp oil
1 tbsp lemon juice
Toppings
1 tbsp finely chopped fresh parsley
4 tbsp gruyere cheese
Method
Heat oven to 400 deg F
Make slits on the salmon
Trim the brussel sprouts and slice into 4 pieces
Mix all the ingredients under marinade
Apply well on the salmon specially inside the slits
Toss the brussel sprouts in the remaining marinade
Grease a baking tray
Arrange the salmon and brussel sprouts in the tray
Top the salmon with parsley
Bake for 20 mins
Change the setting to broil
Sprinkle cheese on the sprouts
Keep for 5 mins
