Rich Chocolate Cake

Notes - additional flavours
1) Instead of boiling hot water you can add mild hot coffee for a stronger bitter taste
2) Stir in 2 tbsp of Godiva chocolate liqueur into the pan
3) Stir in 1/2 cup chocolate chips into the pan
- 1 3/4 cups wheat flour
- 2 cups white sugar
- 1 cup unsweetened cocoa powder
- 1.5 tsp baking powder
- 1.5 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup milk
- 1/2 cup olive oil (or vegetable oil)
- 2 tsp vanilla extract
- 1 cup boiling water
Method
Preheat oven to 350 deg F
Grease and flour two 8 inch cake pans.
Sift together the flour, sugar, cocoa powder, baking soda, baking powder and salt. Set aside.
In a large bowl, whisk together the eggs, milk, oil, vanilla.
Gradually beat in the flour mixture, mixing just until incorporated. Stir in the hot water and mix well.
Pour the very thin and runny batter into prepared pans.
Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool for 10 mins and then remove to cool completely.
