Chicken Xacuti

Ingredients

For Dish
2 lb bone-in chicken
3 medium sized onions
1 tbsp oil
2 black stone flower
2 bay leaves
a pinch of sugar

For Green masala
2 cups coriander leaves
4 garlic pods
1/2 inch ginger
1 green chili

For Marinade
1 tsp turmeric
1/2 cup yogurt
2 tsp salt

For Coconut spice paste
1 medium sized onion
1/2 cup dry desiccated coconut
1 tsp turmeric
ping pong ball sized tamarind

For Masala paste
1 tsp oil
2 tbsp coriander seeds
6 red chilis
1/2 tsp cumin seeds
1/2 tsp peppercorns
1 cinnamon stick
1 tsp poppy seeds
tiny piece of nutmeg
7 cloves
1 tsp fennel seeds


Method

Marination
Blend ingredients under green masala into a fine paste
Mix the ingredients under marination with the green masala
Toss chicken in the marinade and keep aside for 1-2 hours








Coconut spice paste
Slice the onion and in a pan, saute till browned

Add the coconut and saute till it is browned too.
Blend the onion, coconut, turmeric and tamarind to a thick paste.







Masala paste
Heat oil in the same pan and fry all the masala
Once smoky, take off and blend into a thick paste

Dish
Chop the onions into fine pieces
Heat oil in a pan and add bay leaves & black stone flowers. 
Once slightly smoky, add and saute the onions.
Once soft, add the marinated chicken and fry for 5 mins
Add 1/2 the masala paste and let cook for 5 mins
Add the coconut spice paste, rest of masala paste and sugar

Bring to boil and then let simmer for 10 mins on medium heat.


Serve garnished with coriander


Any leftovers can be used to make the delicious Rassa Omelette
