Chicken Kofta Curry



Ingredients

For Koftas

1 lb ground chicken 

1/2 tbsp ginger paste

1/2 tbsp garlic paste

2 tbsp coriander chopped

2 tbsp mint chopped

1 tsp salt 


For Curry

1 onion 

1 green chili

2 garlic pods

2 inch ginger

2 medium sized tomatoes 

1 tsp ground cumin

1 tsp turmeric

1/2 tsp cayenne pepper

1/2 tbsp kitchen king masala

1 1/2 tbsp coriander powder

1 1/2 tbsp kasuri methi

3/4 cup cashew nuts

1/2 cup milk

1/2 cup heavy cream (can be substituted with milk)

1 cup water

1 tbsp oil

Salt to taste


Method


Koftas

Mix together all the ingredients for the koftas.

Make small balls with the mixture. 

Cover with cling wrap and put them in the refrigerator to set.


Curry

Slice onions, ginger, garlic, chilis

Chop tomatoes into small pieces

Heat oil in a pan and sauté onion, ginger, garlic & chili. 

Once soft add the tomatoes and let cook on medium heat till mushy

Once mushy & golden add the cumin powder, salt, turmeric, cayenne pepper and coriander powder. Stir well.

Take off the heat and using hand blender, blend into a thick sauce with the cashewnuts

Put the mix back on medium gas and cook for 5 minutes

Add the kitchen king masala and kasuri methi.

Mix, add the water and all the koftas.

Turn the heat to low, cover and simmer for 15 to 20 minutes until the koftas are cooked through.

Serve with naan or rice.
