Bhindi Fry (Okra fry)

Ingredients
  • 250 gms bhindi chopped fine
  • 1 tsp mustard seeds
  • 1 tsp coriander powder
  • 1/2 tsp chilli powder
  • salt to taste
  • 2 tbsp oil
Method


Heat 1tbsp oil in a wok and add mustard seeds
Once the mustard starts to splutter, add the bhindi
Keep on high heat and fry well till all water disappears (about 10 mins)
Turn the heat to medium
Add the chilli & coriander powders and mix well
Add the remaining oil and sprinkle the salt
Let the bhindi cook for another 10 mins


Note: When the Bhindi is washed, pat it completely dry. Wet bhindi will get very sticky while cutting and cooking
