Dum Aloo (Potatoes in gravy)


Ingredients
  • 1/2 lb small potatoes (plum size)
  • 2 tbsp tomato paste
  • 1 finely chopped onion
  • 1 fine chopped green chili
  • 2 tsp ginger garlic paste
  • 1 tsp lime juice
  • 2 tbsp curd
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 tsp cumin seeds
  • Salt to taste
  • 1 tbsp oil
Method

Wash the potatoes and boil in water till tender. 
Take them out and prick them all over with a fork.
Add about 3 tsp water to yogurt and mix all the spices in it. Stir well to make a paste.

Heat a non-stick frying pan and put oil. 
When the oil starts smoking, add the cummin seeds and stir for a few seconds. 
Add garlic-ginger paste, onions and chillies and fry well
Add the curd mix and cook on medium heat for 5 mins (stir frequently) until oil separates 
Add tomato paste and stir well for 1/2 a minute.
Add potatoes, cover and simmer for 2 minutes.
Add the lime juice and garnish with chopped coriander.
