Kakdi Koshimbir (Cucumber Salad)

Ingredients
  • 1 pound Cucumber/ Kakadi
  • 4-5 green chillies
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • 1/2 cup crushed groundnuts 
  • 1 tbsp chopped green coriander
  • 2 tsp ghee
  • 1/2 tsp cumin seeds
Method
        Peel and mince cucumbers
Apply half lemon juice and keep aside
Roast groundnuts, remove the skin and grind to coarse small pieces.
Heat ghee in kadai, add cumin seeds and let them splutter.
When the seeds start to change their colour, add green chillis
Squeeze the cucumbers to drain off the water.
Mix squeezed cucumber, salt, sugar, remaining lemon juice, groundnuts, coriander and the cumin seeds & chilli mix
