Tuscan Chicken Stew
Ingredients
Cut the chicken in 1 inch cubes, onions in julienne cut and tomatoes in big pieces
Heat oil in large skillet on medium-high heat.
Add chicken and stir for 10 minutes
Remove chicken from skillet.
Add onion and fennel seeds
Cook on medium heat till tender.
Add in beans, tomatoes, red wine, remaining spices and salt.
Bring to boil, reduce heat to low
Cover and simmer 3 minutes.
Return chicken to skillet and add in the spinach.
Cover & cook 5 for minutes until the spinach is wilted.
- 2 tbsp olive oil
- 1 1/2 pounds boneless chicken
- 1 medium onion
- 2 medium tomatoes
- 2 cup beans
- 1/4 cup red wine
- 1 tspn finely chopped garlic
- 1 tspn finely chopped basil
- 1 tspn rosemary
- 1/2 tspn fennel seeds
- 1/2 tspn black pepper
- 1 tspn paprika
- 1/2 tspn oregano
- 1 tspn salt
- 6 ounces baby spinach leaves
