Baked Tilapia with Onion & Celery
- Ingredients
- 1 tbsp olive oil
- 3 tsp salt
- 2 lb tilapia fillets
- 1 large onion, sliced
- 2 stems of finely chopped celery
- 2 tbsp butter
- For Marination
- 2 tbsp olive oil
- 6 tbsp tomato paste
- 2 tbsp garlic paste
- 1.5 tsp oregano
- 1/2 tsp ground black pepper
- 1 tsp red chilli powder
Method
- Apply half the salt to the fish
- Mix onion and celery and toss with the rest of the salt
- Preheat oven to 350 deg F.
- Coat bottom of a medium baking dish with oil.
- In a small bowl, blend all the ingredients required for marination
- Arrange tilapia fillets in the baking dish and spread the marinade mixture over them.
- Add the remaining to the onion and celery mix and arrange them on and around the fillets
- Bake for 15 minutes, until fish is easily flaked with a fork.
- Top each fillet with butter, and set oven to broil.
- Broil 7 minutes, until butter is melted and lightly brown.
