Baked Tilapia with Onion & Celery

  • Ingredients
  • 1 tbsp olive oil
  • 3 tsp salt
  • 2 lb tilapia fillets
  • 1 large onion, sliced
  • 2 stems of finely chopped celery  
  • 2 tbsp butter

  • For Marination
  • 2 tbsp olive oil
  • 6 tbsp tomato paste
  • 2 tbsp garlic paste
  • 1.5 tsp oregano
  • 1/2 tsp ground black pepper
  • 1 tsp red chilli powder



Method

  • Apply half the salt to the fish 
  • Mix onion and celery and toss with the rest of the salt 

  • Preheat oven to 350 deg F. 
  • Coat bottom of a medium baking dish with oil.

  • In a small bowl, blend all the ingredients required for marination
  • Arrange tilapia fillets in the baking dish and spread the marinade mixture over them.
  • Add the remaining to the onion and celery mix and arrange them on and around the fillets 

  • Bake for 15 minutes, until fish is easily flaked with a fork. 
  • Top each fillet with butter, and set oven to broil. 
  • Broil 7 minutes, until butter is melted and lightly brown.
