Red Curry Paste
Ingredients
1/4 cup purple onion, chopped
1 stalk fresh lemongrass, minced
2 red chillies
4 cloves garlic
1 thumb-size piece galangal OR ginger, sliced
2 tbsp tomato puree
1 tsp cumin powder
3/4 tsp coriander powder
1/4 tsp white pepper powder
1 tsp shrimp paste OR thai golden mountain sauce
1 tsp brown sugar
2 tbsp red chilli powder
2 tbsp fresh-squeezed lime juice
1 cinnamon stick
Method
Grind all ingredients into a thick paste
The paste can be refrigerated in airtight containers for couple of days
