Tiramisu

Ingredients
  • Approx 34 ladyfingers (savoiardi cookies)
  • 4 tbsp nescafe 
  • 2 tbsp irish cream
  • 1 tbsp rum
  • 2 cups mascarpone cheese
  • 4 eggs separated
  • 1 cup sugar
  • 2 tbsp cocoa powder

Method


Beat together the egg yolks and the sugar until the mixture is a very light yellow
.
Add the mascarpone cheese and mix well.
Separately, beat the egg whites until they are fluffy and form firm peaks
Carefully fold the egg whites into the mixture. This should lead to a creamy mixture.

Dissolve coffee in 4 cups of warm water 
and add the alcohol.
Dip the ladyfingers cookies one by one, very quickly (hardly 1-2 secs) and lay them in a 9x9 square baking dish.
Spread a layer of the creamy mixture on top of the ladyfingers.
Sift cocoa powder through a mesh strainer and cover the top of the creamy mixture.
Repeat these steps to create a second layer. Refrigerate for at least four hours before serving.




Note: Do not use the soft ladyfingers that are available in the deli/ bakery section. Use the cookie-style ones, available from Balocco, Bonomi and Elledi brands
