Tiramisu
- Approx 34 ladyfingers (savoiardi cookies)
- 4 tbsp nescafe
- 2 tbsp irish cream
- 1 tbsp rum
- 2 cups mascarpone cheese
- 4 eggs separated
- 1 cup sugar
- 2 tbsp cocoa powder
Method
Beat together the egg yolks and the sugar until the mixture is a very light yellow.
Add the mascarpone cheese and mix well.
Carefully fold the egg whites into the mixture. This should lead to a creamy mixture.
Dissolve coffee in 4 cups of warm water and add the alcohol.
Dip the ladyfingers cookies one by one, very quickly (hardly 1-2 secs) and lay them in a 9x9 square baking dish.
Spread a layer of the creamy mixture on top of the ladyfingers.
Sift cocoa powder through a mesh strainer and cover the top of the creamy mixture.
Repeat these steps to create a second layer. Refrigerate for at least four hours before serving.
Note: Do not use the soft ladyfingers that are available in the deli/ bakery section. Use the cookie-style ones, available from Balocco, Bonomi and Elledi brands
