Kimchi
Ingredients
2 lb finely chopped cabbage
1/4 cup red chilli powder
1 tbsp garlic paste
1 tbsp ginger paste
2 tbsp fish sauce or soya sauce
5 finely chopped scallions
1/4 cup salt
Method
Add the salt to 1/4 cup hot water
Soak the cabbage in the salt water mixture atleast for 4 hours
Add red chilli powder to 1/4 cup water and make a paste
Rinse the cabbage well
Add the red chilli paste and all other ingredients to the cabbage and mix well
Store in an airtight container.
Note: Leave space in the container for the cabbage to expand over time.
