Sausage Escarole & White Bean stew
Ingredients
1 tbsp oil
1 medium onion
1 lb Italian sausage
2 garlic cloves
20 oz cannelloni beans
1 small head escarole
1 cup chicken broth or water
1.5 tsp lemon juice
1/2 tsp salt
1/2 tsp Paprika
Method
Heat oil on medium heat.
Add finely chopped onions and cook till tender
Add sausage chopped into 1 inch pieces and cook for about 5 mins
Stir in garlic & beans
Add the escarole, broth, salt & paprika, cover and cook till escarole wilts
Open and stir in lemon juice and remove from heat in a minute.
