Egg Bhurji
4 eggs
1 onion
2 green chilies
1 tomato
1 tsp salt
1/4 tsp tumeric powder
1/2 tsp samaar masala
1 tsp ghee (clarified butter)
1 tbsp finely chopped coriander
Method
Chop onions, chilies & tomato into fine pieces
Break the eggs in a bowl.
Add in salt, rest of the spices and 3 tbsp water
Beat well and and keep aside.
In a pan heat ghee and add the onions & chilies
Saute well till they are slightly browned
Add in tomato and continue to saute.
Once the mix is well cooked, add in the beaten eggs and mix
Keep mixing fast till the required consistency of the egg is reached and take off from the heat.
I take it off while it is still a bit liquid, it thickens further when taken off the heat due to the hot pan.
Garnish with coriander.
Serve hot with bread or chapatis
