Ghuti hui Gobi





Ingredients
1 lb cauliflower
2 tbsp ghee (clarified butter)
1 tsp cumin seeds
1/8 tsp asafoetida
1 tbsp finely chopped ginger
2 tsp coriander powder
1 tsp salt
1/2 tsp turmeric
1/2 cup yoghurt
1/2 tsp garam masala
1 green chillies-slit length wise
1 tbsp chopped cilantro

Method
Wash the cauliflower and chop into very small pieces.

In a heavy-based pan, heat the clarified butter and add the cumin seeds, asafoetida.
When the seeds splutter, add the ginger and saute till light brown.
Add the cauliflower and saute over high heat till it looks glossy
Lower the heat and add the coriander powder, salt and turmeric.
Cover and cook till the cauliflower is soft about 5 minutes.
Add the yoghurt and garam masala, mix well and saute till the fat separates.

Serve hot, garnished with cilantro & green chillies.
