Lamb Dum Biryani

Ingredients
1 lb lamb

1 tbsp oil

1 onion julienne cut

1 cinamon stick
1 tamal patra
1 elaichi
4 cloves
4 peppers
1 tsp chopped garlic
1 tsp minced ginger
2 finely chopped green chillies
1 finely chopped tomato

1 tsp salt

4 tbsp yogurt
0.5 cup finely chopped coriander
1 cup finely chopped mint
1 tbsp garam masala
1 tsp red chili powder (adjust as per required spice level)

1 tbsp ghee
2 cups rice
1 tsp salt
3 cups water
strands of saffron soaked in milk

Method
Soak rice in water and keep aside
Add caption

Heat 1 tsp oil in a pan and saute the onions
Once brown keep aside

Heat remaining oil, add cinamon, tamal patra, elaichi, cloves and peppers
Once they splutter add garlic, ginger, green chillies and saute till browned
Add half the fried onion, tomatoes and lamb pieces with salt and mix well
Keep on high gas for 5 mins and mix at regular intervals
Add yogurt, coriander, mint, garam masala, chili powder
Mix and add 1 cup water
Close and cook on medium for 20 mins

In a separate vessel heat ghee
Saute rice till translucent.
Add 2 cups hot water, salt and cook closed for 2 mins

In a vessel add 1 tsp oil and spread it well in the vessel
Add a layer of rice, a few drops of saffron and  a layer of the lamb curry
Continue till all rice and lamb curry is used up.
Ensure that the top layer is rice.
Top it with the remaining fried onions

Seal the vessel with wheat flour. Put hot water in a pan and place the vessel in it. Keep on low heat for 30 mins or till a strong biryani fragrance spreads around
