Seafood Gumbo
Ingredients
1/2 cup flour
1/4 cup oil
1 cup onion, chopped
1/2 cup celery, chopped
1/2 cup finely chopped scallion
1/2 cup bell pepper, chopped
5 cloves garlic, chopped fine
1/2 tsp black pepper
1 cup chopped tomatoes
4 cups chicken broth
1 tsp thyme
1 tsp basil
1 tsp cumin
2 bay leaves
2 tbsp Worcestershire sauce
1 tbsp hot pepper sauce
1 cup frozen corn
1 1/2 teaspoon salt
1 lb shrimp
1/2 lb crabmeat
Method
Add oil to skillet, heat over medium heat add the flour, to make a roux. This may take about 15 minutes.
Stir in onion, celery, scallion, bell pepper, garlic, and black pepper.
Cook over medium heat about 3 minutes or till vegetables are crisp tender.
Stir in chicken broth, tomatoes, salt, Worcestershire sauce, pepper sauce, corn, basil, thyme, cumin and bay leaf.
Bring to boil and reduce heat.
Cover and simmer for 30 minutes.
Add Shrimp & Crabmeat during the last 10 minute cooking time.
Open and simmer for another 15 minutes
This can also be made with Chicken, if using chicken add 2 lbs chicken during the last 30 minute cooking time.
