Sukurunne

Ingredients

For batter
1/2 cup rice flour
pinch of salt
Filling 
1 cup chana dal
1/2 cup sugar
pinch of salt
10 chopped cashews
pinch of cardamom powder
pinch of nutmeg powder
3 cups oil for frying
Method
Boil dal with salt in 1.5 cup water.
Add sugar and heat till the mixture becomes dry.
Remove from heat and add cardamom & nutmeg for flavor.
Cool and roll into balls

Mix the rice flour & salt with water to make a thick paste

Heat oil in a deep dish (kadhai).
Dip the balls of the filling in the paste and deep fry till the batter is done.
Do not brown them too much.

Yields 25

Note: Increase the quantity of sugar to suit personal taste. This recipe will not make them too sweet.
