Chicken stuffed with Spinach & Paneer
Ingredients
2 lb boneless Chicken thighs or breast pieces
For marinade
1 tsp lime juice
1 tsp salt
1 tsp paprika
1 tsp pepper
For Stuffing
500 gms Paneer
1 tbsp oil
1 onion, finely chopped
3 garlic pods, grated
5 green chillies, finely chopped
2 cups chopped spinach
2 tsp basil
1 tsp salt
Method
Mix all the ingredients for the marinade, toss chicken and keep aside
In a vessel boil water, add pinch of tumeric & salt and add the paneer.
After a min, drain the water and mash the paneer well
Heat oil in a vessel and saute onion, garlic, green chillies
Once the onion is translucent, add paneer & spinach
Wait till the spinach wilts and then stir in salt & basil.
Keep on medium heat for about 5 mins
Preheat oven to 425 deg C
Spray oil in a baking tray.
Place chicken thigh on tray and put a layer of the stuffing.
Roll the thigh and put a toothpick to keep it in place
Arrange all the thigh pieces similarly
Bake for 25 mins
Broil for the last 5 mins to brown the chicken
