Gajar Halwa

Ingredients

1lb carrots, peeled and grated
2 cups evaporated unsweetened milk
1 tsp salt
1 cup sugar
1/4 cup ghee
1 cup almonds, peeled and sliced
1 pinch saffron, soaked in a spoon of warm milk
1/2 tsp cardamom powder

Method

Boil the evaporated milk in a pressure cooker and add grated carrots.
Close and bring to one full pressure on high heat.
Remove the cooker immediately from heat. Release pressure and open
Transfer the mix into a skillet.
Cook on medium heat for 15 minutes.
Stir occasionally to prevent burning.
Add sugar & salt and cook till the mixture dries.
Add ghee and cook about 10 minutes till ghee shows separately; stir constantly.
Remove from heat and stir in the saffron, cardamom powder and almonds.
