Lamb DoPyaza
2 lb lamb
3 tsp coriander seeds
2 tsp cumin seeds
3 large finely chopped onions
3 tbsp oil
2 tsp garam masala
2 tsp salt
1/2 tsp turmeric powder
2 tbsp garlic paste
2 tbsp ginger paste
2 large finely chopped tomatoes

Method
Roast the coriander and cumin seeds till aromatic.
Cool and grind into a coarse powder.
Heat the oil in a large pan on a medium flame and add 2/3rd of the chopped onion
Saute till golden.
Add the meat and fry till browned.
Add all the spices and ginger garlic pastes and tomatoes

Fry till the oil begins to separate from the mixture and add salt
Add the remaining onion and mix well

Once the onions are soft and translucent, add 1 1/2 cups of water, stir and bring to a boil.
Reduce flame to a simmer and cook till the meat is tender.
