Pumpkin Cheesecake Triffle
12 Choco chip cookies
1 tbsp unsalted butter
8 oz cream cheese softened
1.5 cups pumpkin purée
1 tsp vanilla essence
1/2 cup sugar
2 tsp pumpkin spice
12 oz whipped cream
Method
In a bowl crumble the cookies and mix in the butter
In another bowl mix in remaining ingredients except whipped cream
Beat with electric mixer till smooth
Stir in half the whipped cream
For the trifle cups,
Put a layer of the cookie at the bottom
Spoon in a layer of pumpkin cheesecake followed by whipped cream
Repeat layers till filled
Sprinkle some cookie crumble to garnish
Refrigerate at least 4 hours before serving
