Quiche

Ingredients

3 eggs
1 cup grated cheese
1/2 cup whole milk
1/4 tsp salt
1 tbsp butter

Variation I
1 cup finely chopped mushrooms
2 tbsp finely chopped onions
1 tsp thyme

Variation II
1 cup chopped asparagus
1 tsp basil

Variation III
1 cup chopped broccoli
1 tsp red chili flakes

Variation IV
2 cup chopped spinach
2 finely chopped garlic
2 tbsp finely chopped onions
1 tsp pepper

Method
Heat butter in a pan and add all the ingredients listed under each variation.
Saute well till browned. Keep aside

Preheat oven to 400 deg F
Grease muffin pan well with olive oil
Sprinkle a pinch of cheese in each and place in oven till the cheese melts.
Remove and keep aside.

Beat egg till fluffy.
Add in the cheese, milk & salt and beat more

Add a spoon of the sauteed mix into the muffin pan, top with a spoon of the whisked mix

Bake for 15 mins or till the tops turn golden.
Cool and remove the quiches from the muffin pan after 10 mins.
The bottom will have a ice browned bottom from the melted cheese

Makes 24 mini quiches or 12 medium quiches
