Brussel Sprouts with Sausage
Ingredients
2lb brussel sprouts
2 hot italian sausage links (1/2 lb)
1 red onion
1/4 cup red wine vinegar
salt to taste
1/4 tsp pepper
2 tbsp olive oil
1 cup finely chopped parsley
Method
For Pickled onion
Slice red onion into rings and put in a bowl.
Add red wine vinegar, salt & pepper.
Toss well till evenly coated.
Keep aside
For dish
Trim and cut the brussel sprouts in half
In a large skillet, cook the sausage links well
Take out once done
In the same pan add the oil & arrange brussel sprouts with the sliced face down.
Season with salt and let cook for 5 mins
Toss the sprouts to brown all sides
Cook for another 2 mins
Add the sausage and sautee
Take off heat
Mix in the pickled onions and garnish with parsley
