Stuffing II


Ingredients

5 tbsp butter
1 big onion
4 garlic
2 jalapeño
1 yellow pepper julienne cut
1 green pepper julienne cut
16 oz sliced mushrooms
1 cup grated carrots
3 tbsp dijon mustard
1.5 cups broth
1 packet seasoned stuffing mix
1 cup grated mozzarella cheese


Method
Mix peppers, carrots & mushrooms with Dijon mustard and keep aside

Boil the broth and keep aside for later

Chop all the onions, garlic and jalapeno peppers into long slices
Heat 4 tbsp butter in a pan
Saute garlic, peppers and onions till brown
Add the mushroom, carrot, pepper mix and saute till well integrated
Turn off the gas

Add the seasoned stuffing mix and boiling broth a little at a time and blend all the ingredients well together.

Preheat oven to 400 deg F
Spread butter in a baking tray
Put half the stuffing in the tray, sprinkle half the cheese
Add layer of remaining stuffing and top with cheese
Bake covered for 30 mins
