Coconut Shrimp balls
1 lb shrimp
1 medium sized onion
5 green chilli
1/2 cup fresh coriander
3 garlic pods
1 inch piece of ginger
1 tsp tumeric
1 tsp salt
rice flour
rice rawa
1 egg
dry desiccated coconut
1/2 tsp salt
Method
In a food processor, mince shrimp, onion, green chilli, corainder, garlic & ginger into a chunky mix.
Mix in salt & tumeric.
Add 1 tbsp rice rawa & rice flour.
The mixture should be thick such that you should be able to easily make balls.
If required to thicken add more rice flour as per need.
Preheat oven to 450 deg C
In a baking tray spray oil
In a bowl beat the egg, add 1/2 tsp salt
Half fill a separate bowl with desiccated coconut
Make balls with the shrimp mixture
Dip each ball in the egg and then in the desiccated coconut
Place the balls in the baking tray and bake for 15 mins
Change the oven setting to broil and keep fro 2 mins to crisp and brown them.
