Indori Poha




Ingredients

3 cups thick poha
1/2 cup peanuts
1 small sized onion
1 small sized potato
1 green chilli
1 cup peas

a strand of curry leaves
1 tsp mustard seeds
1 tsp fennel seeds
1 tsp turmeric powder
1/2 tsp red chilli powder
1 tsp sugar
1 tsp salt

For Garnish
finely chopped coriander
finely chopped onions
Chiwda

Method
Wash and drain poha completely
Add 1/2 tsp salt and keep aside

Finely chop onions & green chilli
Dice potatoes into cubes

In a pan heat oil
Add mustard seeds, fennel seeds, curry leaves and green chillies
Add peanuts once the mustard seeds splutter
Fry for 2 mins and add the onions
Saute well till the onions are translucent
Add in the potato, peas, turmeric, red chilli powder, sugar & salt.
Cook closed till the potato softens
Add in the poha a little at a time till all is done.
Mix well, cover and cook for 2 mins
Switch off the gas and leave closed for another 3 mins

Serve hot garnished with onions & coriander, topped with chiwda
