Beetroot Croquettes



Ingredients 
2 cups boiled beetroot 
1 small onion
2 tbsp cilantro 
2 garlic pods
2 green chilies (optional)
1/2 cup cheese
1 tsp salt
1/2 tsp kitchen king masala
2 tbsp corn flour ( more if required)

For frying
1 egg (can be substituted with milk for veg option)
Bread crumbs or semolina for frying
Oil

Method
Peel & grate the beetroot 
Finely chop onion, garlic, green chilies & cilantro  
Mix all the ingredients well except corn flour
Add corn flour as required to thicken the mixture so that you can shape croquettes 


Heat oil in a flat pan
Beat the egg in a bowl 
Take breadcrumbs or semolina in a plate
Make thick oval croquettes, dip in egg, roll in semolina or bread crumbs to coat well
Shallow fry, roast on all sides 


Note: these croquettes are very soft & delicate, handle with lot of care when flipping them as they break easily
