Cauliflower au Gratin





Ingredients 

1 lb cauliflower head

1 tbsp olive oil

1 tsp cayenne pepper

1/2 tsp salt


For sauce

2 tbsp butter

1 medium onion

2 minced garlic

4 harbenero peppers

2 tbsp all purpose flour

2 cup whole milk

1 cup Romano pecorino cheese

1 tsp Salt

1 tbsp pepper 


Topping

1/4 cup Parmesan cheese

1/2 cup panko bread crumbs

Chopped cilantro 



Method


Roast cauliflower 

Preheat oven to 400 deg C

Break out big florets of cauliflower 

Toss in oil, cayenne pepper and salt

Line a baking tray with oil and spread the cauliflower florets

Bake for 15-20 mins till lightly browned




Sauce

Julienne cut onions, garlic & harbenero peppers


Heat butter in a pan

Add the slices onions, garlic & peppers 

Let cook till lightly browned 

Add in the all purpose flour and sauté well

Slowly add in the milk and keep whisking to prevent lumps from being formed

Add in cheese and continue whisking well




Assemble

Preheat oven to 375 deg C

Pour the sauce over the roasted cauliflower florets and toss to coat well



Top with Parmesan cheese and panko bread crumbs

Spray with oil


Bake for 30 mins till the cheese start bubbling and is lightly browned




Serve garnished with cilantro
