Kheema per Eeda (Eggs on Ground chicken)


Ingredients
1 lb ground chicken
1 large onion
1 tbsp finely chopped ginger
5 garlic cloves
2 green chilis
1 medium sized tomato
1 tsp salt
1 tbsp Kashmiri chili powder
1/2 tsp turmeric powder
1 tbsp jaggery
1 tbsp vinegar
3 eggs
1 tbsp chopped cilantro 

Method
Heat oil in a pan
Chop onions, garlic, chilis & tomato into very fine pieces 
Sauté onions till browned 
Add in ginger, garlic & green chilies and sauté
Add in the ground chicken and mix well.
Keep mashing it so as to not allow lumps to be formed
Add in the salt, Kashmiri chili and turmeric powder and mix well
Once browned add in tomato, half a cup water and cover and let cook on medium gas for 5 mins
Add in the vinegar & jaggery and let cook for 2 more mins
Make 3 pits in the kheema and break one egg at a time
Cover and cook on low gas for 5 mins
Keep the eggs a bit runny. 

Garnish with cilantro and serve hot with toasted bread
