Khaman Dhokla
Ingredients
1 tbsp ghee
1 1/2 cups besan (gram flour)
1 1/2 tbsp rava (semolina)
3 tsp sugar
1 tsp ginger paste
2 finely minced chili
1 tsp lemon juice
1/2 tsp turmeric
1 tsp salt
1 tsp fruit salts
3 tsp oil
1 tsp mustard seeds
a pinch of asafoetida
Strand of curry leaves
3-4 chilies slit lengthwise
1 tsp sugar
Finely chopped cilantro
Method
Grease a bowl with ghee and keep aside
Mix besan, rava, sugar, ginger, chilis, lemon juice & salt.
Add in 3/4 cup water and blend well
Mix in the fruit salts
Beat for a minute to make it fluffy and then pour into the greased pan
Place in a cooker and steam for 20 mins on medium heat.
In a pan heat oil, add in mustard seeds, asafoetida, curry leaves, chilies and temper for a min.
Take off heat once they splutter.
Add in the sugar and 1/3 cup warm water. Mix well to dissolve the sugar.
Pour this mix over the warm dhokla
Slice into squares, serve hot garnished with coriander and grated coconut.
Note: Fruit salts can be substituted by 1 tsp baking soda & 1/2 tsp vinegar
