Grilled Bronzino
2 whole Branzino (approx 2.5 lbs)
1 tsp red chili powder
2 tsp paprika
1 tsp cumin powder
1 tsp coriander powder
1 tsp pepper
6 garlic pods
1 inch ginger
2 tsp salt
1 tbsp oil
Method
Grate/ mince the ginger & garlic
Mix all the ingredients listed above
Add water as required to make a thick paste
Clean the branzino
Put slanted slits on the branzino
Apply the prepared marinade to the fish
Keep atleast for an hour, longer the better.
Preheat oven to 400deg C
Prepare a baking tray by spraying it with oil
Place the branzino in the tray and grill for 16mins
Change setting to broil & keep for 2 mins. Do not keep longer else it will burn. Broiling helps make the skin crispier.
Note: it comes out equally good on an outdoor grill
