Bread Tomato Egg Cheese with Gravy

5 slices of Bread
1 beef steak tomato
5 slices of cheese
5 Eggs
For Gravy
1 cup sliced mushrooms
2 tbsp flour
1 cup milk
Salt
Pepper
Method
Slice the tomato into thick rounds slices. Beef steak tomatoes are very juicy and work best in this recipe. If unavailable, use any other variety available.
Place the slice of tomato on a bread slice. Top it with a slice of cheese and broil in the oven till the cheese melts.
Fry each egg as per preference - fully fried, over easy or sunny side up. Keep aside
In a pan heat butter and add the flour. Sauté the flour till lightly browned.
Add in the mushrooms and sauté till browned
Mix in the milk & bring to boil. If it seems too thick, add water and boil
Add in salt and pepper as per taste.

Serving
In a plate, place the toasted bread
Top it with an egg
Generously pour the gravy
Note:
1. Make the gravy at the last minute; it thickens very fast
2. For richer gravy, substitute milk with cream.
