Chocolate - Coconut - Banana Bread
Ingredients
For Custard
1 tbsp vanilla flavored custard powder
1 tbsp sugar
1 cup milk
For cake
2 browned bananas
2 eggs
1/3 cup olive oil
1 cup whole wheat flour
3/4 cup sugar
1 tsp baking soda
1/2 tsp salt
1/2 cup sweetened shredded coconut
1/2 cup chocolate chips
Method
Custard
Mix custard powder well in 1/4 cup milk
Heat rest of the milk and add sugar to it
Once boiled, add the custard mix and simmer for a minute.
Keep aside and let it cool
Cake batter
In a big bowl, mash the bananas
Break in the eggs and beat well
Add in the oil, custard and mix
Add in flour, sugar, baking soda and salt
Fold till well integrated
Incorporate shredded coconut and chocolate chips
Cake
Preheat an oven at 325 deg C
Prepare loaf pans by spraying it with oil
Pour the batter till half full
Bake for 45 mins or till a toothpick comes out clean
Cool for 10 mins and then take the cake out of the pan
Note: the custard can be substituted by 1 cup vanilla pudding
