Rum Cake

Ingredients

For the cake
1/2 cup chopped walnuts
4 eggs
1/2 cup cold water
1/2 cup vegetable oil
1/2 cup dark rum

1 box yellow cake mix (15 Oz box)
1 box instant pudding (1 Oz box)

For the rum glaze
1/2 cup butter
1 cup granulated sugar
1/4 cup water
1/2 cup rum

Method

Preheat the oven to 325 F.

To make the cake
Grease a 12 cup bundt pan.
Sprinkle about 1/4 cup walnuts at the bottom of the pan.
Beat the eggs in a mixing bowl.
Mix in the other liquid ingredients
Mix in the rest of the ingredients and then fold in the remaining walnuts.
Pour the mix into the greased pan and bake in the preheated oven for 60 mins.

To make Glaze
While 10 mins are remaining for the cake to be baked; make the glaze
For the glaze, melt the butter in a saucepan.
Stir in the sugar and water and continue stirring till sugar dissolves.
Allow to boil for 5 mins and then remove from heat.
Stir in the rum.

Once you take cake out of the oven, keep the cake in the pan
Generously prick holes in the cake with skewers.
Drizzle the glaze over the cake in the pan and wait till it is soaked up.
Take the cake out of the pan after 10mins
Prick many holes in top and the sides.
Drizzle and smooth the glaze over the top and sides of the cake.
Allow the cake to absorb the glaze completely and then repeat till the entire glaze is used up.
