Misal Pav

Ingredients
For Usal
1 cup sprouted matki
1 tbsp oil
1 onion
1 tomato
1/2 tsp turmeric powder
1/2 tsp salt
1.5 tsp kolhapuri kanda lasoon masala
1.5 tsp goda masala
For Rassa
2 tbsp oil
1 onion
1/2 cup dry grated coconut
1 tomato
1/2 tsp turmeric powder
1/2 tsp salt
1 tsp goda masala
1 tsp red chili powder
1 tsp coriander powder
1/2 tsp cumin powder
For servings
Finely chopped onions
Finely chopped fresh cilantro
Shev chiwda mix
Pav
Method
Usal

Chop the onion & tomatoes in small pieces
In a pan heat oil
Add onion and fry till soft & browned
Add in the tomatoes and cook till a nice pulp ready
Add in turmeric, salt & kolhapuri kanda lasoon masala
Sauté for 2 minutes
Add the boiled matki, goda masala & 1/4 cup water
Boil till the water is almost dried
Keep usal aside
Rassa
Julienne cut the onion & tomatoes

In a pan heat oil
Add onion and fry till soft
Add the grated coconut, sauté till the mix is browned
Add in the tomatoes and cook till soft
Add in turmeric, salt.
Take off the heat and let cool
Using a hand blender, purée the mix
Add in goda masala, chili, coriander & cumin powder
Mix well and add 6 cups of water
Heat on high till the water boils
Switch to medium and let simmer for 10 mins
To serve
Heat butter in a pan and toast the bread
In a plate put some usal, pour rassa
Top with onions, coriander & shev chiwda mix
