Peruvian Roast Chicken
Ingredients
1/3 cup Soy sauce
2 tbsp Lime juice
5 Garlic cloves
2 tsp Cumin powder
1 tsp Paprika
1/2 tsp red chili powder
1/2 tsp Oregano
1 tsp salt
1 tbsp Oil
2 lbs bone in Chicken
Method
Mince garlic. Mix with rest of the ingredients to prepare the marinade
Make slits in the chicken pieces
Put chicken in a large ziplock bag and add the marinade.
Marinate in refrigerator for 8 – 24 hrs.
Heat the oven to 500 F
Put the chicken on a roasting rack with 1 cup of water in the roasting tray below.
Roast it for 35 minutes.
Roast it for 35 minutes.
Then set to broil and roast until brown in color for about 5mins
Serve with Aji Verde & Cucumber Tomato Avo salad
