Seekh Kabab



Ingredients
1 tbsp cumin seeds 
1 tbsp coriander seeds
2 red chilis 
1/2 cup chopped onion
1 tbsp minced ginger
1 tbsp minced garlic
2 finely chopped green chilis
1/2 cup chopped Cilantro
1/2 tsp baking soda 
1 tbsp ghee
1 lb ground chicken

Method
Heat a pan
Sauté cumin & coriander seeds
Pour into a dry grinder 
In the same pan sauté the red chilis
Add to the dry grinder and make a coarse powder
Pour in a mixing bowl 

Add 1 tsp oil in the pan and sauté onion till well browned. Let it cool and then add to the mixing bowl.

Add rest of the ingredients in the bowl and knead well for 5 mins
Place in refrigerator for an hour. The meat gets well marinated and also holds shape on the skewers

Dip hands in water & take some of the mixture. 
Make kababs of equal sizes on skewer.


Take each kabab off the skewer and keep in a plate.
Once all kababs are ready, heat oil in a frying pan. 
Fry kababs on medium flame from all sides until done (approx. 6-8  minutes)



Serve hot with pudina-dahi chutney

Serves: makes 10 kababs
