Scotch Eggs (baked)
Ingredients
6 eggs
1/2 lb ground turkey
1/2 cup chopped cilantro
1/2 tsp salt
1 finely chopped green chili
1/2 cup panko bread crumbs
1/4 tsp paprika
1/4 thyme
Method
Boiling eggs
Heat 1 qt of water
Add 1 tsp salt
Once boiling, add the eggs
Switch to medium heat and let cook for 8 mins
When the timer goes off pour the water out
Add cold water with lot of ice to prevent further cooking of the eggs.
Once cool, peel the eggs
Preheat oven to 400 deg F
Assembling scotch egg
In a bowl mix ground turkey with green chili, cilantro & salt
In another bowl mix panko bread crumbs with paprika & thyme
Wet your hands and take a egg size ball of the ground mix.
Wrap the ground mix around each egg
Roll the egg wrapped with meat in the bread crumbs
Spray oil on a baking tray and place the eggs
Spray the eggs with oil
Bake for 20mins
