Seared Lamb chops



 Ingredients 
1.5 lb lamp chops

For Marinade
1/3 cup soya sauce
1/3 cup lime juice
1 tbsp salt
1 tsp pepper
2 tsp Italian seasoning
1 tsp red chili powder
2 tbsp olive oil

For searing
2 tbsp oil
2 tbsp butter



Method

Marinade
Mix all the ingredients for marinade and put in a zip loc bag
Put the lamp chops in, fold tight and refrigerate overnight

Before cooking take out and keep for 15 mins to bring to room temperature 

Searing
Heat a pan on high flame
Pour the oil once smoky reduce to medium heat
Place the lamp chops on the pan and let cook for 4 mins
Flip them over and cook for another 3 mins
Take out on the plate and put a blob of butter on each and serve.

Sear Timing
3 + 3 mins - medium rare
4 + 3 mins - medium 
5 + 4 mins or more - well done
