Breakfast Tacos
Ingredients
Corn tacos
For Egg scramble
4 eggs
1/2 cup chopped peppers
1 finely chopped jalapeño
1 /4 cup cheese
1/4 tsp salt
1/4 tsp turmeric powder
1 tbsp oil
1/2 tbsp chopped parsley
For Avo paste
2 avocados
1 tsp lemon juice
1/4 tsp salt
1/4 tsp pepper powder
1/2 tsp garlic powder
Method
Egg scramble
In a bowl break the eggs, add 2 tbsp water
Beat them till very fluffy
Add in peppers, jalapeño, cheese, salt & turmeric powder
Mix well
In a pan heat oil
Pour the egg mixture and keep mixing to make a nice scramble
Take off heat while still liquidy. It will continue cooking more on the hot pan.
Sprinkle the chopped parsley
Avo paste
Peel the avocado and take the seed out
Mash the avocado well
Add in lemon juice, salt, pepper & garlic powder
Mix well.
Note: Make the paste when ready to eat because when exposed to air avocado starts turning black.
Assembly
Heat the tacos in a pan
Take a warm taco in a plate
Generously spread the avocado paste
Top with the egg scramble
It can be topped with chopped onions, tomato salsa
