Pad Krapow Gai (Holy Basil Chicken)
Ingredients
4 tbsp oil
4 Thai bird chilies thinly sliced, increase if spicier preferred.
5 garlic pods thinly sliced
3 shallots thinly sliced
1 lb ground chicken
2 tsp brown cane sugar
4 tbsp soya sauce
2 tbsp fish sauce
2/3 cup chicken broth
1 bunch holy basil leaves
Method
In a wok heat oil on high heat
Add chilies, garlic and sauté a min
Add in the shallots and continue sautéing on high heat
Add in chicken and mix well. Using spatula make it granular
In a bowl whip together soya sauce, fish sauce & sugar
Once the chicken changes color, add in the sauce and keep stirring
Add in the chicken broth to deglaze the wok. Because of the hot wok, the water will disappear fast.
Add in the holy basil leaves whole or chopped and cook for only half a min.
Serving
In a bowl add cooked white rice, top with chicken
In a wok heat about 1/4 cup oil
Once hot, break an egg in the oil.
Fry the egg till the edges are nice and crispy, keep the yolk runny

Top the rice & chicken with the egg.
