Kingfish Ghee Roast

 


Ingredients 

1/2 lb kingfish steaks

1 tbsp lemon juice

1 tbsp ghee

1 finely sliced garlic 

1 small onion thinly sliced 

1 strand of curry leaves

1 tsp chopped coriander leaves


Spice mix

1/4 fenugreek seeds

1/2 tsp cumin seeds

6 red chilis

4 Kashmiri red chilis

1/2 tsp salt


Method

Grind all ingredients under spice mix into a fine powder

Add in the lemon juice and minimal water to make a paste

Marinate the steaks with 1/4 of the paste and keep aside for 15-30mins


Heat a pan and add 1/2 the ghee

Place the marinated fish and roast on each side for 3 mins each

Take off and keep aside


In the same pan add the remaining ghee

Add the curry leaves, garlic and sauté for a min

Add in the onions and sauté till browned

Add the remaining paste with 1/4 cup water and sauté till the water dries off.

Again add 1/4 cup water and place the fish steaks in the pan

Top the fish with the paste and let simmer for 3 mins.

Flip the fish and let simmer for 3 more minutes 


Serve hot, garnished with coriander
