Stuffed Sweet Peppers




Ingredients 

For dish

1 lb sweet peppers

1 tsp olive oil

1/2 tsp salt


For filing

1/2 cup crumbled goat cheese

1 jalapeño

1 garlic clove

1/4 tsp black pepper

5 pieces of sun dried tomatoes (optional)


Method

Slice the sweet peppers in half

Remove the seeds

In a bowl mix oil and salt

Toss the sliced peppers in the mix and keep aside 


Filling

Slice the jalapeño and remove the seeds 

Chop the jalapeño & garlic into fine pieces

Mince the sun dried tomatoes

In a bowl mix together the goat cheese, jalapeño, garlic, sun dried tomato & black pepper


Preheat oven to 425 deg F

Fill each half of the sweet pepper with the cheese filling



Place in a single layer on a greased baking tray

Bake in oven for 25 mins




Serve once slightly cooler to prevent a burn by the cheese.


Notes: to make in Airfryer

Roast for 12 mins at 380 deg F
