Pesto Zoodles


Ingredients 

2 lb zucchini 

2 tbsp pesto sauce

1/2 tsp salt


Cheese, olives for garnish


Method

Take off the top and bottom of the zucchini 

Make zucchini noodles or zoodles using a mandolin, spiralizer or food processor

Place the zoodles in a bowl and microwave for 1 min


In a pan add pesto sauce and salt.

Sauté for a min

Toss the zoodles in the sauce and serve hot.


This will give you al dente texture zoodles, cook longer if softer required. But be careful not to overcook else it will be mushy


Top with cheese and olives as per choice
