Scallion Goat Cheese muffins
Ingredients
1.5 cups blanched almond flour
1/2 tsp sea salt
1/2 tsp baking soda
1/4 tsp black pepper
1/4 cup olive oil
3 large eggs
1/2 cup finely sliced scallions - white & greens
1 jalapeƱo chopped into fine pieces
9 tbsp goat cheese
Method
In a bowl whip up the eggs
Add in olive oil, sea salt, baking soda & black pepper. Mix well
Add in almond flour and mix to esure there are no lumps
Blend in the scallion & jalapeƱo pieces
Preheat oven at 350 deg F
Prepare a muffin pan by greasing the moulds with oil
Put 1 tbsp batter in 9 cupcake moulds
Top with 1 tbsp goat cheese
Top with the remaining batter
Bake for 15 mins or until a toothpick passed through the edge comes out clean. Try to avoid the goat cheese when doing the check.
