Savory Carrot Soufflé



 

Ingredients 

1 lb carrots, peeled and cut into 1/2-inch-thick rounds

1/2 cup milk

3 large eggs

3/4 tsp kosher salt

3 tbsp unsalted butter,

3 oz shredded sharp cheddar cheese 

1/8 cup almond flour

1 tsp baking powder


Method

Fill a large saucepan halfway with water

Season with salt, and bring to a boil over medium-high heat. 

Add the carrots and simmer, until very tender. About 10 minutes. 

Drain the water.


Add milk, eggs and salt in a food processor and blend until smooth. 

Add the cooked carrots, butter to the mix and blend until very smooth. 


Transfer to a large bowl.

Add in the cheese, flour and baking powder 

Stir until combined. 


Preheat oven to 350 deg C

Prepare a 1 qt soufflé dish by applying butter well on the insides

Transfer the carrot mix to the prepared dish and spread into an even layer. 


Bake until puffed and just set in the middle, about 1 hour.

Serve immediately.
