Chicken Cafreal


Ingredients
  • 2 pound chicken
  • 4 small potatoes


For Marination
  • 1 cup coriander leaves
  • 10 green chillies
  • 5 garlic cloves
  • 2 inch ginger 
  • 5 cloves
  • 5 pepper corns
  • 1 tbsp cumin seeds
  • 1 tbsp fennel seeds
  • 1 tspn tumeric
  • 1 tbsp salt


    For Dish
    • 1 tbsp thick tomato paste
    • 2 tbsp dark rum
    • 2 tbsp lemon juice


    Method
    Cut the potatoes in 4 pieces and chicken into preferred size. 
    Mix rest of the ingredients listed for marination and grind to fine paste with minimum water
    Apply ground mix to chicken & potatoes and keep atleast for an hour
    Put the marinated mixture into a pan and keep on sim till chicken and potatoes are tender
    Turn the heat high and cook till the gravy dries up
    Now mix in the tomato paste, rum and lemon juice. 
    Cook till the gravy dries up or at a consistency you like.

    Serves    4

    Note: The rum gives a nice glaze to the chicken but feel free to skip it based on preference
